Watermelon salad recipe

Ingredients

Dressing

  • 2 to 3 tablespoons olive oil
  • 1 to 2 cloves garlic (minced)
  • 3 to 4 tablespoons lime juice
  • Dash of sea salt

Salad:

  • 5 to 6 cups cubed watermelon
  • 1/2 cup crumbled feta cheese
  • 1/2 cup mint leaves
  • Sea salt (to taste)

Directions

  • Whisk together the olive oil, minced garlic, lime juice, and sea salt to make the dressing and set aside.
  • Place the cubed watermelon in a large bowl and drizzle with half the dressing, then toss.
  • Add the feta, mint leaves, and sea salt along with anything else you want to add for fun.
  • Drizzle in the remaining dressing, then toss a second time and serve!

Note: If you want, you can also add other ingredients like avocado, red onion, jalapeños, basil, walnuts, and cucumber. Experiment and taste as you go to adjust the flavor to your liking.
