Ingredient of the month: Artichokes

We don’t know about you, but we feel like artichokes are having a moment—if Paris fashion week was Paris food week, artichokes would have absolutely been walking the runway. But besides being trendy, artichokes have a lot going for them, nutritionally speaking. For one, they’re full of nutrients like vitamin A, vitamin C, and iron, and they have more protein than most other veggies, weighing in at 5.8 grams per 1 cup of artichoke hearts. They’re also high in fiber and contain inulin, a type of fiber that plays an important role in supporting healthy digestion and nutrient absorption.

Artichokes can do a lot for us when it comes to nutritional benefits and that’s all super interesting, but what’s more interesting is how you can use them. To help inspire you, we’ve rounded up 5 recipes that prove the artichoke is the most in-vogue vegetable out there. 

Stuffed artichoke
