For one, they’re full of nutrients like vitamin A, vitamin C, and iron, and they have more protein than most other veggies, weighing in at 5.8 grams per 1 cup of artichoke hearts. They’re also high in fiber and contain inulin, a type of fiber that plays an important role in supporting healthy digestion and nutrient absorption.
